Drying — The Make-or-Break Step

Dry-Room Setpoints, VPD & the Real Endpoint

Slow, cool, even moisture pull steered by VPD and dry-back weight — plus the water-activity endpoint that stem-snap can't give you.

"60/60" is a starting point, not a spec

The industry shorthand 60°F / 60% RH lands you inside the window, but temperature and RH interact: 60% RH at 65°F pulls water very differently than 60% RH at 80°F because warm air holds far more moisture. Serious ops therefore steer by VPD and by dry-back weight, not RH alone. The goal is a slow, cool, even pull that moves moisture from the core to the surface faster than the surface can crust over.
