Trim is a math problem, not a taste preference

The existing lesson covered what wet/dry and hand/machine do to quality. This one puts a dollar on the decision. Trimming and harvest are the two largest labor sinks in the facility, so trim method isn't a craft opinion — it's one of the biggest controllable costs per finished pound.
